Pilar’s Soapbox draws inspiration from For Whom the Bell Tolls, one of my favorite novels. Pilar, crass at times but endlessly memorable, is one of my favorite characters, known for speaking her mind, playing matchmaker, and offering plenty of unsolicited advice. Unlike life in a guerrilla camp, this bar is all comfort: a warm, spicy floral scent that transports you to Spain and leaves you feeling uplifted, not battle-worn.
